| It is said that Kishimen
was corrupted from Kijimen which was a soup noodle with pheasant meat, or was
transformed from Kishumen that originated from the Kishu region. It is a flat
and wide noodle and is famous for its fine, palatable and smooth taste served
in a soup of weaker soy sauce with deep-fried bean curd, green nappa and shavings
of dried bonito. |
